Description

Delicious and wholesome muffins made with cottage cheese and blueberries, perfect for breakfast or a snack.


Ingredients

  • 1 cup cottage cheese
  • 1 cup blueberries
  • 1/4 cup sugar (or alternative sweetener)
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix cottage cheese, sugar, milk, vegetable oil, eggs, and vanilla extract until well combined.
  3. In another bowl, combine flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  5. Gently fold in the blueberries.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool for a few minutes before transferring to a wire rack.

Notes

For sweeter muffins, increase the sugar slightly. Frozen blueberries can be used; just fold them in while still frozen.
