Description

Deliciously soft and chewy blondies infused with fresh apples and topped with a warm maple glaze.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup butter (softened)
  • 1/4 cup sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 large apples (chopped finely)
  • 2 Tbsp brown sugar
  • 1 Tbsp butter
  • 1/4 cup pure maple syrup
  • 1/2 cup powdered sugar
  • 1/4 tsp vanilla extract
  • 1/8 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 11×7 pan with tin foil or spray with cooking spray.
  2. Mix chopped apples with 2 Tbsp brown sugar, 1 Tbsp butter, 1/2 tsp vanilla extract, and 1/2 tsp cinnamon in a small bowl. Set aside.
  3. Whisk together flour, baking powder, and salt in a large bowl.
  4. Cream together the softened butter, 1/4 cup sugar, and dark brown sugar until smooth. Add in the eggs, 1 1/2 tsp vanilla extract, and 1/2 tsp cinnamon, mixing well.
  5. Gradually add the flour mixture to the wet ingredients. Stir until just combined. Fold in the apple mixture.
  6. Pour the batter into the prepared pan and spread it out evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Melt 2 Tbsp butter in a bowl for the maple glaze. Stir in maple syrup, powdered sugar, 1/4 tsp vanilla extract, and 1/8 tsp ground cinnamon until smooth.
  9. Let the blondies cool slightly before drizzling the maple glaze on top.

Notes

Serve warm or at room temperature. Delicious with ice cream or whipped cream.
