Quick and easy fritters made from fresh zucchini and carrots, perfect as a snack or light meal.
Ingredients

- 2 cups grated zucchini, squeezed dry
- 1 cup grated carrots, squeezed dry
- 1/4 cup all-purpose flour
- 2 large eggs, lightly beaten
- 1/4 cup finely chopped onion
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil, for frying
Instructions
- Combine the grated zucchini, grated carrots, flour, beaten eggs, chopped onion, parsley, salt, and black pepper in a large bowl. Mix well until everything is combined.
- Heat the olive oil in a large non-stick skillet over medium heat.
- Spoon 2-3 tablespoons of the mixture for each fritter into the hot skillet, pressing down slightly with the back of the spoon.
- Cook for 3-4 minutes on each side or until the fritters are golden brown and cooked through.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.
- Serve warm and enjoy!
Notes
For added flavor, mix in cheese or spices. Ensure to squeeze out moisture for crispy fritters.
