Description

Delicious and nutritious Pumpkin Protein Balls, perfect for a healthy snack anytime.


Ingredients

Scale
  • 1 cup pumpkin puree
  • 1 cup rolled oats
  • 1/4 cup protein powder (vanilla or unflavored)
  • 1/4 cup peanut butter or almond butter
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup honey or maple syrup
  • 1/4 cup mini chocolate chips (optional)

Instructions

  1. Combine the pumpkin puree, rolled oats, protein powder, and nut butter in a large bowl.
  2. Add in the cinnamon, nutmeg, and honey (or maple syrup). Mix until well combined.
  3. Fold in the mini chocolate chips if using.
  4. Use your hands or a spoon to form the mixture into small balls, about 1 inch in diameter.
  5. Place the balls on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to help them firm up.
