Description

Delicious and nutritious protein bites packed with the flavors of strawberries and creamy yogurt, perfect for a quick snack.


Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup coconut flour or oat flour
  • 1/4 tsp salt
  • 1 scoop vanilla protein powder
  • 1/2 cup Greek yogurt
  • 1/2 tsp almond or vanilla extract
  • 1 TBSP unsweetened vanilla almond milk
  • 35 fresh strawberries
  • 1 oz freeze-dried strawberries (just over 1 cup)
  • 1/4 cup coconut oil, melted

Instructions

  1. Blend the oats, flour, salt, and protein powder in a food processor until combined (less than a minute).
  2. Add the yogurt, vanilla or almond extract, unsweetened almond milk, and fresh strawberries. Blend until mixed (about a minute).
  3. Pour in the melted coconut oil and blend one last time, just enough to distribute the oil evenly.
  4. Carefully add the freeze-dried strawberries and pulse a few times to keep chunks.
  5. Scoop out spoonfuls of the batter and roll into balls until the batter is finished (approximately 20 bites).
  6. Place the bites in the refrigerator to chill before enjoying.

Notes

These bites can be stored in an airtight container in the refrigerator for up to a week, or frozen for longer storage.
