Delicious and nutritious protein bites packed with the flavors of strawberries and creamy yogurt, perfect for a quick snack.
Ingredients

- 1 cup rolled oats
- 1/2 cup coconut flour or oat flour
- 1/4 tsp salt
- 1 scoop vanilla protein powder
- 1/2 cup Greek yogurt
- 1/2 tsp almond or vanilla extract
- 1 TBSP unsweetened vanilla almond milk
- 3–5 fresh strawberries
- 1 oz freeze-dried strawberries (just over 1 cup)
- 1/4 cup coconut oil, melted
Instructions
- Blend the oats, flour, salt, and protein powder in a food processor until combined (less than a minute).
- Add the yogurt, vanilla or almond extract, unsweetened almond milk, and fresh strawberries. Blend until mixed (about a minute).
- Pour in the melted coconut oil and blend one last time, just enough to distribute the oil evenly.
- Carefully add the freeze-dried strawberries and pulse a few times to keep chunks.
- Scoop out spoonfuls of the batter and roll into balls until the batter is finished (approximately 20 bites).
- Place the bites in the refrigerator to chill before enjoying.
Notes
These bites can be stored in an airtight container in the refrigerator for up to a week, or frozen for longer storage.
