Ingredients

- 2 apples, diced finely
- 1 egg
- 1 tbsp melted coconut oil
- 1 tsp cinnamon
- Sprinkle of baking powder
- 1/4 cup oats
- 1/4 cup rice flour (or oat flour)
- Optional: drizzle of maple syrup for added sweetness
Instructions
- Preheat your oven to 375°F (190°C).
- Mix the diced apples with cinnamon in a bowl.
- Combine the egg, melted coconut oil, oats, and flour in another bowl.
- Add the apple mixture into the wet ingredients and stir until combined.
- Spoon the mixture onto a baking sheet lined with parchment paper.
- Bake for about 15-20 minutes or until golden.
- Drizzle with maple syrup if desired before serving.
Notes
Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to a month. Reheat in the oven to restore texture.
