- 1 cup Unsweetened shredded coconut
- 1/4 cup Honey (or maple syrup for a vegan version)
- 2 tbsp Fresh lemon zest
- 3 tbsp Fresh lemon juice
- 1 tsp Vanilla extract
- 1/8 tsp Turmeric (for natural yellow color)
- A pinch of salt
- Extra shredded coconut (for rolling)
Instructions
- Combine: Place the almond flour, shredded coconut, salt, turmeric, honey, lemon zest, lemon juice, and vanilla extract into a food processor.
- Process: Pulse the ingredients until a thick, sticky dough forms. Make sure the lemon zest is evenly mixed in.
- Shape: Scoop out about 1 tablespoon of dough at a time. Roll it between your palms to form smooth, round balls.
- Coat: Put extra shredded coconut in a shallow bowl. Roll each ball in the coconut until they are fully coated.
- Set: Place the bliss balls on a tray or in a container and refrigerate for at least 120 minutes. This helps them firm up nicely.
- Store: Keep them in an airtight container in the refrigerator for up to 14 days.
Notes
For stronger lemon flavor, add more lemon zest or juice. Use a cookie scoop for even-sized balls. If mixture is too sticky, add more almond flour.
