Deliciously flaky empanadas filled with a savory ground beef mixture, perfect for gatherings or as a snack.
Ingredients

- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 hard-boiled eggs, chopped
- 1/2 cup olives, chopped (optional)
- 2 packs of empanada dough discs
- 1 egg, beaten (for egg wash)
Instructions
- In a skillet over medium heat, cook the chopped onion, garlic, and bell pepper until soft.
- Add the ground beef and cook until browned.
- Stir in the cumin, paprika, salt, and pepper. Cook for another 5 minutes.
- Remove from heat and mix in the chopped hard-boiled eggs and olives.
- Preheat the oven to 375°F (190°C).
- Lay out the empanada dough discs and place a spoonful of the beef mixture in the center of each.
- Fold the dough over to create a half-moon shape and crimp the edges to seal.
- Place the empanadas on a baking sheet and brush with the beaten egg.
- Bake for 25-30 minutes or until golden brown.
Notes
Serve warm with chimichurri sauce for dipping.
