Description

Deliciously flaky empanadas filled with a savory ground beef mixture, perfect for gatherings or as a snack.


Ingredients

Scale
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 hard-boiled eggs, chopped
  • 1/2 cup olives, chopped (optional)
  • 2 packs of empanada dough discs
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a skillet over medium heat, cook the chopped onion, garlic, and bell pepper until soft.
  2. Add the ground beef and cook until browned.
  3. Stir in the cumin, paprika, salt, and pepper. Cook for another 5 minutes.
  4. Remove from heat and mix in the chopped hard-boiled eggs and olives.
  5. Preheat the oven to 375°F (190°C).
  6. Lay out the empanada dough discs and place a spoonful of the beef mixture in the center of each.
  7. Fold the dough over to create a half-moon shape and crimp the edges to seal.
  8. Place the empanadas on a baking sheet and brush with the beaten egg.
  9. Bake for 25-30 minutes or until golden brown.

Notes

Serve warm with chimichurri sauce for dipping.
